I came across this recipe from Super Healthy Kids a couple of years ago, and have loved them ever since! The first couple of times I made them, my daughter was a tiny toddler and would eat anything. Then she turned three. I have had the hardest time, getting anything that isn't pasta or oatmeal into her (I guess she doesn't know oatmeal is good for her yet?).
Anyways, I had sort of forgotten about this recipe, when my sister in law asked me if I had any good chicken nugget recipes. I immediately thought back to this one, and was so happy that I found it so easily on pinterest! It is pretty much like a falafel, but kids love it because they think that it is a chicken nugget, and probably because it tastes so darn good! Trust me, I had my fair share.
You can even make them some cute origami fry bags to put the nuggets in, for a more "restaurant feel."
Dip them in some homemade ketchup and you'll have a "chicken nugget" that you're actually happy about feeding to your kid. If you don't have kids, make them for yourself! You wont be disappointed.
Ingredients
1 can garbanzo beans
1/2 onion
fresh parsley
1 clove garlic
1 egg
1 teaspoon cumin
1 teaspoon salt
1 dash pepper
1 teaspoon lemon juice
1 teaspoon baking powder
1 tablespoon extra virgin olive oil
1 cup bread crumbs
Directions
Mash beans into bowl using a fork or pastry blender. In a small food processor, place the onion, parsley, and garlic together and mix well. Blend the onion mix with the mashed beans
Then in a separate bowl, combine egg, cumin, salt, pepper, lemon, baking powder and olive oil. Mix with bean dip and slowly pour 1 cup of bread crumbs into the mixture. Shape into nuggets. I fry them in a small pan with a little bit of olive oil, but I'm sure they could be baked as well, so if you try that let me know if it works for you.
We played "restaurant," and my daughter gobbled these right up!

ReplyDeleteSounds like a great taste and could use white beans, pinto beans, etc... and enjoy the results. High in protein and fiber and very cheap and healthy eating.
