I ( like I'm sure the rest of you) have a serious zucchini overload in my garden right now. I have been using them up in my baking like crazy, but wanted to find a different way to eat them. I came across this delicious recipe at Skinny Taste and knew that I just HAD to try it. It was so easy to make, and when I had licked my plate clean, I felt like I had just indulged in a delicious carb-loaded pizza, but nope, it was just these guiltless zucchini pizza bites!
Ingredients
4 slices large zucchini 1/4" thick
olive oil spray
salt and pepper
4 tablespoons quick marinara sauce (or regular pasta sauce)
1/4 cup shredded mozzarella cheese
Directions
Cut zucchini into 4 slices about a 1/4' thick. Spray both sides lightly with olive oil and season with salt and pepper to taste. Broil or grill the zucchini on both sides for 2 minutes each. Top with marinara sauce and cheese and broil for an additional minute or two. Be careful not to burn the cheese.
