Simple Tomato Soup

Last year, I took a further look into my health, and discovered that I, like many others, have a few food sensitivities. I was placed on an elimination diet (gluten, dairy and egg free).  It was a brand new concept to me, and I felt like there wasn't much that I could partake in. I basically stuck to fruit, vegetables, meat, potatoes and rice. My friend, Barb, (knowing that I was on an elimination diet), generously invited me over for lunch. I was so thrilled that someone was kind enough to invite me over and cater to my "restrictive," (or so I thought at the time), diet.

 I made my way over to her house and lunch was served. She called it, Simple Tomato Soup, and it changed the way I thought about my diet. It was music to my taste buds! I started thinking more about what I could eat, instead of what I couldn't. I have made it several times since then, and it is definitely one of my favourite soups today! Ingredients

4 tablespoons coconut oil
2 medium yellow onions, thinly sliced
1 teaspoon fine grain sea salt, to taste
3 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon cumin
1/2 teaspoon chili flakes
2 (28 oz) cans whole tomatoes
3-6 cups water (depending on how creamy you like it)
1 (14 oz) can coconut milk

To serve :  Top with your choice of croutons, a dollop of sour cream or coconut milk, fresh herbs, roasted slivered almonds, juice from a lemon, a scoop of brown rice, or a poached egg. In the picture above I had rice, roasted almonds, oregano, lemon juice, and a drizzle of coconut milk. Perfection!

Directions

In a large pot over medium heat, melt the coconut oil. Add the onions and salt, stirring occasionally until the onions soften up (about 10 minutes). Once the onions are soft, stir in the curry powder, coriander, cumin and chili flakes. Stir constantly for 30 seconds until the spices are fragrant. Stir in the tomatoes, the juices from the cans and 3-6 cups of water. Simmer for 15 minutes or so then puree with a hand blender until smooth. Test the soup and decide if you want it thinner (by adding more water), or creamier (by adding some coconut milk). Taste and adjust with more salt to taste. Enjoy! Alex
