Greek Chickpea Burgers

Ingredients

1 medium carrot grated
1 garlic clove
1 19oz can chickpeas
1 1/2 teaspoons ground cumin
1 teaspoon basil
salt and pepper
1 large egg
2 Tablespoons flour
oil for frying

Directions

Peel carrots and grate or blend in a food processor. Peel and roughly chop the garlic. Drain and rinse chickpeas and place into a food processor with the garlic and spices. Process to obtain a rough paste, then add the carrot, egg, and flour. Process until evenly mixed but still slightly rugged. Heat oil in a frying pan and divide mixture into 8. Fry in batches for 2-3 minutes each side until golden.

Serve atop a whole wheat bun with tzatziki, feta cheese, tomato slice, spinach and cucumber. Yum!
