Corn, Tomato & Basil Salad

Adapted from recipe found at Girl Makes Food


1 Tablespoon coconut oil
3 cups corn
2 garlic cloves minced
5 - 6 grape tomatoes
1/4 cup basil (measured, then minced) 
cracked pepper and sea salt to taste

Heat the coconut oil in a pan, then add the corn and garlic. Fry until cooked through, and slightly browned. Transfer to a bowl. Slice the grape tomatoes, then add them and the basil to the corn and mix thoroughly. Season with salt and pepper.

(Don't substitute the coconut oil, it's what really makes this salad!)

Simple and delicious!
