Tomato and Basil Flatbread

My sister-in-law kindly introduced me to this delight last week and I have not been able to stop thinking about it since! Please go make this immediately, you will not regret it.


1 7" flatbread
3 cocktail tomatoes
2 leaves of basil
1/3 cup of mozzarella
1 Tablespoon crumbled feta cheese

Balsamic glaze

1 cup balsamic vinegar
1 Tablespoon honey

To make the glaze, bring vinegar and honey to a boil in a saucepan. Reduce to medium-low heat, stirring occasionally for 20-30 minutes until thickened. Remove from heat. Glaze will further thicken while cooling. 
Preheat oven to 450F
Slice tomatoes and basil, then assemble on the flatbread and sprinkle with cheese. Drizzle the glaze overtop. Bake for 10 minutes.

  1. I have not tried this version before. The honey with the Balsamic Vinegar......why didn't I think of that before? Awesome! Going to go make some right now. I have all the ingredients here.

    P.S. You take the BEST food photos ever! Love the criss cross cuts. I am drooling all over my keyboard. ; )
