Believe it or not, but growing up we considered brussel sprouts a "treat"! When we got to only a few left in the bowl, us kids even fought over who would get the last ones. Perhaps this was spurred by us creating a rule that we could only have as many as how old we were. Each year older marked one more delicious sprout to devour! I had never even given my own children the pleasure of experiencing the beloved brussel sprout until last night. My 3 year old, after tasting this said, "Mom, this is the best dinner I've ever had!"
Let the fights begin!
Ingredients
2 Pounds brussel sprouts
5 Cloves of garlic, pressed
1/4 Cup of freshly grated parmesan cheese
2 Tablespoons extra virgin olive oil
Kosher salt, to taste
Fresh ground pepper, to taste
Directions
Preheat oven to 400 degrees. Lightly spray a 9 x 13 glass baking dish with cooking spray. Cut off the bottom of each brussel sprout and take off a layer of the leaves. Cut the sprouts in quarters and place in a medium sized bowl with the pressed garlic, parmesan cheese, olive oil, salt and pepper. Mix well and transfer to glass dish. Place in oven for 40-50 mins stirring every 5-10 minutes or so, to prevent burning.

Is it wrong to admit I've never had a brussel sprout! However I think I'll have to try this, it looks so yummy and easy, what would you serve this with?
