Creamy Cauliflower Soup


As you can tell, I've been on quite the soup kick lately. What I love about this recipe, is that it is super comforting and creamy, without any dairy! It is very simple to make, and my picky eater gobbled it up, even asking for a second bowl (what?). I will be making this one often!


Slightly adapted from Jenn Cuisine

Ingredients 

2 tablespoons coconut oil
1 onion, chopped
2 cloves garlic, minced
1 bay leaf
1 head cauliflower, chopped
4 medium white potatoes, chopped
3 cups vegetable broth
2 cups almond milk
salt and pepper to taste
thyme for garnish

Directions 

Melt coconut oil in a skillet and add onion, garlic and bay leaf until soft. Transfer to a large pot. Add cauliflower, potatoes, broth and milk and bring to a boil. Reduce heat to simmer and let cook until potatoes are soft. Discard bay leaf Remove from heat and puree with a blender. Add in salt, pepper to taste. Garnish with thyme. Enjoy - Alex

  1. Question: Does coconut oil have some health advantage over olive oil, or is it just a question of flavour? I've noticed that you (and other healthy-food-blogs) use it a lot and I'm just trying to get more info. Thanks! :)
