Fresh Spring Rolls with Homemade Hoisin Sauce


My good friend had me over for lunch a couple of months ago, and she made these delicious spring rolls! It is now one of my favourite go to lunches when it is super hot out, or I don't feel like putting in a lot of effort. Thank you, Leslie for introducing me to these, and for the recipe!




Spring rolls

Rice paper
Carrots
Cucumbers
Avocado
Vermicelli noodles

Sauce Ingredients

5 tablespoons gluten free soy sauce
3 tablespoons of peanut butter
1 1/2 teaspoons of honey
2 teaspoons sesame oil
1/2 teaspoons of hot sauce (optional)
1/4 teaspoon garlic powder
dash of white pepper

Roll up sliced carrots, cucumber, avocado and vermicelli noodles in the rice paper. Dip in sauce, or spread sauce over the rolls.

* Feel free to add anything extra you might want in your rolls like lettuce, tomatoes, or even chicken. Enjoy! - Alex
